Shiraga Negi (White Hair Scallion)

Ingredient:

1 Negi scallion (Sub: 1 leek)
4 ice cubes
2 cups water


Direction:
Separate green part of Negi scallion. We will only use the white part.
Cut into 2 inch pieces.
Slice it very thinly along the grain.
Shock scallion in the ice water causing it to curl and let soak for 10 minutes. This will get rid of the harsh onion flavor.
Drain well then serve it as garnish.
