Meatless Mabo Tofu

Ingredients:

1 pound soft tofu
1 clove garlic
2 tablespoon ginger
2 green onions
2 tablespoon olive oil
1 teaspoon chili bean paste (Doubanjiang)
1 tablespoon miso
1 cup water
2 tablespoon sake
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon red chili flakes (Gochugaru)
1/2 tablespoon chicken base
1 teaspoon black pepper
6 tablespoon potato starch water (2 tbsp potato starch + 1/2 cup water)
1 tablespoon sesame oil and pinch of red chili flakes to serve


Direction:

1. Mince garlic and ginger.
2. Chop scallions finely then separate the green and white parts.
3. Cut tofu into 1.5 inch cubes.
4. Make sauce by mixing water, sake, soy sauce, sugar, chili flakes, and chicken base into a small bowl.
5. Make starch water by thoroughly mixing potato starch and water.
6. Heat pan and add olive oil. Sauté garlic, ginger, white part of scallions, chili bean paste and miso over medium heat until well combined.
7. Add sauce mixture
8. Carefully add tofu.
9. Cover and bring sauce to a boil.
10. Turn off heat. Add starch mixture and quickly mix until the sauce achieves a thick consistency.
11. Bring back to a simmer. Stir in half of the green part of scallions and black pepper.
12. Turn off heat. Add remaining scallions, sesame oil and red chili flakes.
13. Serve hot over rice.
