VEGETABLE CHILI

Ingredients:

2 onions
3 cloves of garlic
2 carrots
2 celery stalks
1 green pepper
1 bell pepper (any color you like)
1 jalapeño
1 15oz can black beans (drained and rinsed)
1 28oz can diced tomatoes
2 cups water
1 table spoon olive oil
1 ounce chili seasoning mix
1/2 tablespoon black pepper
Shredded cheddar cheese (or vegan cheese) and cilantro for serving

Direction:

1) Chop all the vegetable in bite size, smaller size for jalapeño. Slice garlic thin.
2) In a Dutch oven, saute garlic in olive oil, add the vegetables and stir.
3) Add can diced tomatoes, 2 cups water and black beans and bring to a boil.
4) Mix in chili seasoning and black pepper then simmer for 10 minutes.
5) Serve with shredded cheddar cheese and cilantro.
